  • 3 (8 oz) blocks cream cheese, cubed
  • 1 ½ cups shredded Mexican blend cheese

Instructions

    1. Place the chicken breasts in the slow cooker. Sprinkle the garlic powder, onion powder, cumin, salt, and black pepper evenly over the chicken.
    2. Pour the Rotel, diced green chiles, and pickled jalapeños over the chicken.Add the cubed cream cheese on top.
    3. Cover and cook on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and easily shreddable.
    4. After about an hour or so mix in cream cheese and add about 1 cups of shredded mexican or chedder cheese.
    5. Using two forks, shred the chicken directly in the slow cooker and mix it with the creamy sauce.
    6. Stir in 1 more cup of shredded Mexican blend cheese (or cheddar) until fully melted and incorporated.
    7. Serve warm over rice, in tortillas, on top of nachos, or as a dip with tortilla chips!
